The Herbfarm, one of the Pacific Northwest’s most influential restaurants, almost wasn’t a restaurant. It started out as a literal herb farm in Fall City, Washington, run by Ron Zimmerman’s parents. In 1986 he joined the family business with his wife, Carrie Van Dyck, and planned to expand it. The new iteration of the farm would attract customers with cooking and crafting classes, and he’d use his talents as a former marketing executive for an outdoor recreation company to put out a world-class mail-order catalogue. Oh, and they’d serve some lunches too, so people could taste fresh herbs, which back then were something of a novelty.
