Wife-and-husband team Stacey Gibson, a top-tier sommelier, and Joey Gibson, an entrepreneurial chef, met in the aughts working in New York City restaurants. Sixteen years later, they’re fulfilling their long-held dream of opening a wine bar in Portland. Parallel, a new Sandy Boulevard wine bar, is using wines like Spanish mencia and a mineral-driven white from the Loire Valley as a reference point for a food menu of small plates and charcuterie boards.
