When Justin Miller started making cashew cheese, little did he know that his hobby would grow into one of Portland’s hottest vegan businesses, slinging rich and creamy dairy-free creations at farmers markets, on restaurant menus, and now out of its very own shop at the Vegan Mini-Mall.
