Rick Munro is a barista by trade, but since starting his pop-up Malpractice in 2022, Portlanders have flocked to buzzy spots like Voysey, Dirty Pretty, and Too Soon to try his high-concept cocktails, which have included ingredients like feta cheese-infused sotol and a banana vinegar reduction. This fall, the pop-up will evolve into a full-fledged cocktail bar, one that Munro is designing to be a place that he wants to go to — a bar with a loud, dark ambiance that gets experimental with bartending techniques like acid adjusting and force carbonation.
