Adán Fausto, a chef who has worked for big names including Daniel Boulud, Alain Ducasse, and Thomas Keller, is known in Portland for his erstwhile pop-ups Paradise Mariscos and Tacos con Onda. Following his departure last month from the Submarine Hospitality and Sortis Holdings-backed Los Burros Supremos, which he founded, Fausto plans to bring back a retooled version of his pop-ups, fusing the two into Mariscos con Onda.
The pop-up is anticipated to take over the Pisha-Dufflys’ psychedelic bar the Houston Blacklight beginning in early June. Here, Fausto will serve dishes such as ceviche, seafood cocktails, shrimp flautas, and fried oyster tortas. Mariah Pisha-Duffly told the Oregonian that Fausto
