In October, Portland restaurant group Sesame Collective opened a maximalist cocktail bar downtown called Icarus. The bar served elaborate, goofy cocktails with over-the-top touches, like coffee drinks served with mallets to crush tuiles into the glass, or Hennessy daiquiris with flashing LED “ice cubes.”
For the venue’s next act, Sesame Collective is going far simpler — and, in the words of owner Kasey Mills, “more timeless.” Bar Dolly, taking over the former Icarus space this July, will be an extension of the restaurant group’s successful Italian restaurant next door, Dolly Olive, with a broader, more Mediterranean wine list and a range of classic cocktails and spritzes.
