When Chef Earl Ninsom opened his first Portland restaurant Paadee, he knew he wanted to introduce those foods from his childhood to a completely new audience.
PORTLAND, Ore. — Chef Earl Ninsom, whose Northwest Portland restaurant recently won a James Beard Award, knew he wanted to make it big in the restaurant world after he tried the French upscale restaurant Le Pigeon back in 2009.
His best friend was a sous chef at the time and told him that restaurants recognized by the James Beard Awards were the ones to follow.
